What to see and do in Uncastillo

Uncastillo
Village
Uncastillo is a town of the Cinco Villas, in the province of Zaragoza, with 594 inhabitants (INE 2025), declared a historic-artistic ensemble in 1966 for housing one of the most important monumental ensembles in Aragon, with the highest density of Romanesque art in the region and half a dozen churches from the 11th to the 13th centuries. Its territory, in the sierra de Santo Domingo, was occupied before the Romans by the Suessetani, Celts defeated in 179 BC by the general Aulo Terencio Varrón, who destroyed their capital, Corbio. The earliest references to Uncastillo, then Uniuscastri, date from the 10th century, when King Sancho Garcés raised on the Peña Ayllón, at the confluence of the rivers Cadenas and Riguel, the fortress that gave rise to the town, a frontier enclave in the Reconquest.
Church of Santa María la Mayor de Uncastillo
Monument
Romanesque church of Uncastillo, in the Cinco Villas, built between 1135 and 1155 at the expense of King Ramiro II of Aragon over an earlier 10th-century Mozarabic church; for centuries it was the town's main temple and came to hold collegiate status. Rectangular in plan and with a single nave with a semicircular apse, it stands out for its rich sculpture, attributed to the Master of Oloron, which decorates the archivolts of the south doorway, the lintel of the western atrium and the corbels of the apse. In the 14th century a Gothic tower was added, and in the 16th a Renaissance cloister and a Gothic choir; in the 17th century the chapel of the Santo Cristo was added, along with the atrium that replaced the old west doorway, on which a stone epiphany was placed.
Church of San Martín de Uncastillo
Monument
One of the six Romanesque churches of Uncastillo, dating from the 11th to the 13th century.
Festivities of Uncastillo
Activity
Uncastillo celebrates its patronal festivities on 8 September; the municipality also preserves the Fiesta de los 50 Caballeros in July and the Fiestas de Los Bañales on the last Sunday of May, linked to its Roman archaeological site.
Roman city of Los Bañales
Historical milestone
Site of some 24 hectares occupied from the second century BC, with monumental baths, a forum and an aqueduct of which more than seventy sandstone pillars remain standing. It was abandoned in the third century and has been systematically excavated since 1942.
October 1934 and the repression in Uncastillo
Historical milestone
The revolution of October 1934 provoked clashes between day labourers and the Civil Guard in Uncastillo. In 1936 the Francoist repression shot the socialist mayor Antonio Plano and close to one hundred and forty left-wing residents of the villa.
Rancho of Uncastillo
Food and drink
Thick stew of rice with pork, chorizo and vegetables that was cooked in a cauldron for the gangs of reapers and for the pilgrimage festivals. It is still prepared at the festivities of the villa and is among the most cited dishes of the comarca.
