What to see and do in El Maíllo

El Maíllo
Village
El Maíllo is a municipality of around 282 inhabitants in the Sierra de Francia, with abundant forests of pine, oak and holm oak. Founded by the Leonese kings in the Middle Ages, it was called Mayllo and belonged to the Partido de Ciudad Rodrigo, in the subdivision of the Campo de Yeltes, of which it occupied the south-eastern end; the fire that destroyed its municipal archive during the Civil War wiped out much of its earlier history. Iberian pork takes centre stage in its cuisine: its typical dish is patatas meneás, with bacon, paprika and bay leaf, alongside the curious “limón”, which mixes citrus fruit, sardines, chorizo and garlic with a sauce of egg yolk crushed in wine.

Food and drink
The typical dish is patatas meneás, boiled and mashed with bacon, paprika and bay leaf. More unusual is «el limón»: lemon and orange with chorizo, garlic and boiled egg, whose yolk is crushed in the mortar with wine to make the sauce.
