What to see and do in Castejón de Valdejasa

Castejón de Valdejasa
Village
Castejón de Valdejasa, in the south of the Zaragoza Cinco Villas, 45 kilometres from the capital, has 188 inhabitants. It is known for its pickled rabbit (conejo escabechado), a method of preserving game in vinegar, oil, bay leaf and pepper, which it celebrates in April with its own fair. The village preserves the parish church of Santa María la Mayor, the castle of Sora and the hermitage of Santa Ana. Its festivals are spread through the year: 20 January in honour of san Sebastián, 25 and 26 July in honour of Santiago and Santa Ana, and the third Sunday of August dedicated to the Virgen del Rosario. The highest point of its municipal area is Mount Esteban, at 747 metres, on the boundary with Tauste and Zaragoza.

Food and drink
Rabbit cooked in an escabeche of vinegar, oil, bay leaf and pepper is the speciality of Castejón de Valdejasa, where a fair devoted to escabeche dishes is held in April. The technique made it possible to preserve game meat in the hot months.
