Guijuelo
Village
Guijuelo is the most important town in the south-east of the Salamancan Campo Charro and the capital of the comarca that bears its name, together with the Salvatierra sub-comarca; its municipal area, which also takes in Cabezuela, Campillo and Palacios, covers 63.23 km² and has around 5,400 inhabitants. The place name, documented since the 17th century as Guixuelo or Guijuelo de Salvatierra, has been linked to guijo or guija, pebble, in reference to a stony landscape. The town today lives off the Iberian pig: its cold, dry climate favours the curing of hams and sausages protected by the denomination of origin that bears its name, with around 173 businesses in the trade. It preserves El Torreón, the apse of a 15th-century church.
