Vilviestre del Pinar
Village
Vilviestre del Pinar is a Burgos municipality of 511 inhabitants, in the Demanda y Pinares comarca, stretching between 1,060 and 1,450 meters of altitude, between the sierras of Urbión, Neila and Demanda; its highest point is Mount Carmona, at 1,448 meters. Bathed by the Arlanza river to the north and the Abejón to the south, more than 80% of its area is covered by forests of Scots pine, maritime pine, Portuguese oak and oak, exploited for timber. It is part of the Mancomunidad Alta Sierra de Pinares together with Palacios de la Sierra, Canicosa de la Sierra, Regumiel de la Sierra, Neila and Quintanar de la Sierra. Its settlement, divided into the districts of San Martín and San Roque, preserves the characteristic cubic houses of the cart drivers and some crested palace from the 15th to the 19th centuries.

Food and drink
Wild boar, roe deer and red deer taken from the pine woods are stewed in marinade or in a caldereta and coexist with the home slaughter. In these mountain villages cured chorizo and loin are still the winter larder.
