What to see and do in Jaraba

Jaraba
Village
Jaraba is a spa town of 294 inhabitants, in the comarca of the Comunidad de Calatayud, province of Zaragoza, at an altitude of 767 metres; its medicinal waters are the municipality's main draw for tourism and employment. The village's name comes from the brambles that invaded the ravine where the thermal springs welled up; with the Muslim conquest the place name evolved into its present form, of Arabic origin and related to the abundance of water. Jaraba lies on the banks of the Mesa river, which here receives a large part of its flow thanks to numerous springs and which, as it passes through the gorges towards Calmarza, has carved out a canyon with reddish limestone walls; its waters sustain populations of trout and crayfish.

Monument

Trout of the Mesa river
Food and drink
The river Mesa, a tributary of the Piedra belonging to the Ebro basin, flows through the provinces of Guadalajara and Zaragoza and empties into the Tranquera reservoir, in Nuévalos; at Jaraba it receives a large amount of water from its thermal springs. Its cold waters, especially as it passes through the gorges, sustain a population of trout, and in the past it was also home to abundant Iberian river crayfish, now practically extinct after the introduction of the American red crayfish; there are signs that otters also live there. In the villages along the Mesa and Piedra rivers, trout is prepared floured and fried, a traditional recipe of the area's freshwater cuisine, and a fish farm once operated alongside the river.
