What to see and do in La Ginebrosa

La Ginebrosa
Village
La Ginebrosa is a municipality of Bajo Aragón, in Teruel, at 702 metres above sea level and with 188 inhabitants (INE 2025). Its occupation dates back to the Iberian period, with remains at the Tozal de La Catma and the castle of Buñol, also inhabited in Islamic times. Documented since 1272 as a possession of Blasco de Alagón, it received its founding charter in 1291 and passed through the Templar and Hospitaller commanderies of Castellote and, in the 16th century, through the Calatrava commandery of Alcañiz; in 1613 it lost part of its territory when Aguaviva and Mas de las Matas, formerly its quarters, split off. Its church of San Bartolomé, Gothic and from the 14th century, preserves the apse and the first original section; the rest is later. It preserves a bread oven, ice houses from the Ruta de las Bóvedas del Frío y los Lavaderos, L-shaped, facing a mill from 1868.

La Ginebrosa celebrates its patronal festivities in the week of 24 and 25 August, in honor of San Bartolomé and Santa María Magdalena, with the recipe for cordero a la pastora (shepherd's-style lamb) as one of the associated culinary traditions.

Food and drink
The winter repertoire combines lamb stewed a la pastora with beans cooked with game partridge. Both dishes reflect the double stock-raising and hunting base of the villages of the sierra of the Bajo Aragón.
