What to see and do in Novales

Novales
Village
Novales is a municipality located on a plain of the market-garden lands of the Hoya de Huesca, on the right bank of the río Guatizalema, 16 kilometres southeast of the capital; it borders Albero Alto, Argavieso and Sesa. First documented in 1097, it preserves the parish church of Nuestra Señora del Rosario, of twelfth-century Romanesque construction, a fifteenth-century castle and the nineteenth-century hermitage of San Joaquín. At the Nido de los Cuervos plot, an Iron Age site has been located. The festival is celebrated in October in honour of the Virgen del Rosario. It is one of the villages where borage is grown, a winter vegetable almost exclusive to the Ebro valley and its foothills, and it has 154 inhabitants (INE 2025).

Monument
The parish church of Novales, in the Hoya de Huesca, is dedicated to Our Lady of the Rosary. It is a Romanesque-style building erected in the 12th century, which remains the Catholic temple and the leading religious building of this small Huesca settlement.

Food and drink
Winter vegetable almost exclusive to the Ebro valley and its somontanos: the stalks are peeled and boiled with potato, dressed with raw oil or sautéed with ham, and with the tender leaves crespillos are made.
