What to see and do in Benifairó de la Valldigna

Benifairó de la Valldigna
Village
Benifairó de la Valldigna is one of the four villages of the Valldigna, in the Valencian Safor, alongside Tabernes, Simat and Bárig. Its name comes from the Arabic banī Ḫayrūn, “sons of Jayrún”, and it was an alquería granted by James I in 1249; in 1298 James II handed it to the Real Monasterio de Santa María de la Valldigna, lord of the place until the 19th century. In the 15th and 16th centuries its main activities were sugar cane, textile craftsmanship and silk, with a population mostly Morisco until their expulsion in 1609. Today it is known for its arròs al forn, cooked in a clay pot with chickpeas, black pudding and rib in the village's wood-fired oven, using the broth from the previous day's stew.

Food and drink
It is cooked in an earthenware dish with chickpeas, sliced potato, blood sausage, ribs and a whole head of garlic, making use of the broth of the previous day's stew. It was a Sunday dish and was taken to be cooked at the town's wood-fired oven, which made it on a falling heat.
