San Salvador
Village
San Salvador, also called San Salvador de Hornija, is one of the smallest municipalities in the province of Valladolid, in the Montes Torozos, with barely twenty inhabitants, 10.47 km² and 715 metres of altitude. According to the dictionary of Pascual Madoz (1849), it lies in the most marshy part of the valley of Torrelobatón, on the southern bank of the río Hornija; in the mid-19th century it had 144 inhabitants. It preserves the church of the Cristo Salvador and the hermitage of the Cristo, and celebrates its festivities in honour of San Gregorio.

Food and drink
In this municipality of barely twenty inhabitants the grain was ground in a flour mill documented in the 19th century. From its lands came wheat, barley, pulses and good pastures, the basis of the spoon cooking and of the round loaf of the whole moorland.
