What to see and do in Tronchón

Tronchón
Village
Tronchón is a town in the Teruel Maestrazgo, with 56 inhabitants, which gives its name to the famous cheese made with sheep's and goat's milk that Cervantes mentioned in Don Quixote and that the Count of Aranda brought as a gift to the French court; it is still made by traditional methods. Recaptured by Alfonso II, it passed in 1212 to the Order of the Temple, which granted it a founding charter in 1272, and in the nineteenth century it lived through at close quarters the Carlist Wars that made these mountains famous, along with the figure of General Ramón Cabrera, the Tiger of the Maestrazgo. The parish church of Santa María Magdalena stands in the village. In the mid-nineteenth century Tronchón had as many as 950 inhabitants, a population that has now shrunk drastically.

It is made with raw or pasteurised sheep's, goat's or mixed milk, coagulated with rennet or with the vegetable coagulant Cynara cardunculus. It is circular in shape, with a characteristic volcano-shaped hollow on both faces and a flower pattern on the rind; its colour ranges from ivory white to light brown, it weighs between half a kilo and two kilos, and it has an elastic paste with an intense flavour. It was already famous in 1615, when Cervantes mentions it twice in the second part of Don Quixote.

It is made with raw or pasteurised sheep's, goat's or mixed milk, curdled with enzymes such as that of the cardoon (Cynara cardunculus) and subjected to intense pressing that gives it its characteristic shape: a volcano-shaped hollow on both faces and a floral pattern on the rind. It weighs between 0.5 and 3 kilos, with an elastic ivory-to-yellowish paste. As early as 1615 it enjoyed fame throughout Spain, and Miguel de Cervantes mentioned it twice in the second part of Don Quixote. Since 2008 it has held quality protection in the Region of Valencia.
