Cheese of Tronchón Curiosity · Tronchón, Maestrazgo, Teruel Tronchón cheese is a variety native to this town in Teruel, made in the natural region of the Maestrazgo, a historic comarca that stretches across south-eastern Teruel and northern Castellón, and which since 2008 has held a quality mark protecting its production as far as the Valencian Community. It is made with raw or pasteurised sheep's, goat's or mixed milk, coagulated with rennet or with the vegetable coagulant Cynara cardunculus. It is circular in shape, with a characteristic volcano-shaped hollow on both faces and a flower pattern on the rind; its colour ranges from ivory white to light brown, it weighs between half a kilo and two kilos, and it has an elastic paste with an intense flavour. It was already famous in 1615, when Cervantes mentions it twice in the second part of Don Quixote. Photo: Thesupermat (CC BY-SA 4.0) What to see and do in Tronchón
