Villalmanzo
Village
Villalmanzo is a municipality of 409 inhabitants in the Arlanza comarca, province of Burgos, born of the Mozarabic resettlement of the Middle and Lower Arlanza after the year 912, when the Christian defensive line moved to the Duero. Situated near the frontier of the nascent Castile, it was razed three times by Muslim raids, in 933, 953 and 955, and in 1812 French troops burned the town during their retreat after the defeat at Arapiles, with only a few houses in the Cantarranas quarter surviving. Villalmanzo was the birthplace of Marcelo Adrián Obregón, one of the «last of the Philippines» who defended the barracks at Baler. It lies within the Ribera del Arlanza designation of origin; its typical dish, chumarro, is desalted and roasted cod, flaked and cooked with oil, garlic and chilli.

Food and drink
Recognised in 2007, the designation brings together 62 municipalities between Burgos and Palencia. The tinta del país rules, accompanied by garnacha, and among the whites albillo and viura, in high-altitude vineyards on poor soils.
