Villahoz
Village
Villahoz is a village of 262 inhabitants in the Arlanza comarca, province of Burgos, founded towards the end of the 9th century by Mozarabic resettlers. It appears recorded as Villa Fabze in 1079, in the Cid's Carta de Arras (dowry charter), and enjoyed a period of flourishing between the Middle Ages and the 16th century. It preserves a notable ensemble of Castilian vernacular architecture, with stone houses on the ground floor and timber framing on the upper storeys, and several hundred wine cellars grouped on a hill overlooking the village, many of them still used for family wine production. The town's ensemble was declared a Bien de Interés Cultural (Spain's highest level of heritage protection), as a historic ensemble, in 1983, and its large Renaissance hall-church of the Asunción was declared a monument in 1991.

Food and drink
The milk-fed lamb of the churra breed, raised in the flocks that make use of the valley's stubble, is roasted in a wood-fired oven in an earthenware dish with water and salt. It is the festive dish in all the villages of the riverbank.
