The roast lechazo of the Arlanza riverbank

The milk-fed lamb of the churra breed, raised in the flocks that make use of the valley's stubble, is roasted in a wood-fired oven in an earthenware dish with water and salt. It is the festive dish in all the villages of the riverbank.
