What to see and do in Cifuentes

Cifuentes
Village
A municipality in the La Alcarria comarca, in the province of Guadalajara, whose name alludes to the springs of the river Cifuentes, which rises at the foot of its castle and flows into the Tagus along the Ruta de la Lana. The seat of an archpriestship after the reconquest of Cuenca, in 1273 Alfonso X created in its hamlet of Gualda the Real y Honrado Concejo de la Mesta. It is crowned by the fortress that the infante don Juan Manuel — author of El conde Lucanor and lord of the place — built on the hill in the 14th century; in 1431 it passed to Juan de Silva, alférez mayor of Castile, giving rise to the county that took the name of the town. In the 18th century, in reprisal for count Fernando de Silva's rebellion against the Bourbons, his palace on the plaza Mayor was destroyed. Its matanza cuisine preserves the morteruelo of the Alcarria.
The castle of Prince Juan Manuel
Monument
The infante don Juan Manuel, author of El conde Lucanor, received the seigneury in the fourteenth century and raised the fortress on the hill that dominates the town. In 1431 Juan de Silva received the place from royal hands, the origin of the county that bore the town's name.
Alcarria-style morteruelo
Food and drink
Hot paste of pork liver crushed with game meats, breadcrumbs, cumin and paprika, sister to the Cuenca morteruelo and documented in the east of the province. It is served spread on bread as a starter at winter and pig-slaughter meals.
