What to see and do in Ciguñuela

Ciguñuela
Village
Ciguñuela is a village in the province of Valladolid, 12 km from the capital, located on the Camino de Santiago coming from Madrid and 460 km from Santiago, with a pilgrims' hostel. It has about 360 inhabitants, engaged in wheat and barley farming, livestock and services, in a landscape of broad Castilian plains. Its most notable monument is the church of San Ginés, from the 16th century and the tallest building in the village; inside it keeps the Cristo del Humilladero, an anonymous 15th-century carving sometimes attributed to Gil de Siloe, and a main altarpiece by Esteban Jordán. The hermitage of el Humilladero and the plaza Mayor complete the village. Here was born the schoolteacher Dióscoro Galindo, shot alongside García Lorca in 1936.

Monument
Built in the 16th century, it is the most emblematic monument of the village. It holds an altarpiece of the same century by the sculptor Esteban Jordán and a Cristo del Humilladero of the 15th century. Its tower served as a visual link with the neighbouring watchtowers and castles of the moorland.
Squabs from the dovecote
Food and drink
In the villages of the moorland, the adobe dovecotes were not ornament: they raised squabs for the table and pigeon dung to fertilise the fields. Stewed or roast squab is still one of the most deeply rooted dishes of the Torozos, today recovered by haute cuisine.
