Alustante
Village
Alustante is a municipality in the comarca of Señorío de Molina, in Guadalajara, situated on páramos rising above one thousand two hundred metres — the village itself stands at 1,410 m and its municipal area reaches 1,834 m at the Alto de las Neveras. It has 152 inhabitants (INE 2025) and includes the settlement of Motos, annexed to it in 1970. The climate, continentalized Mediterranean, is cold and damp from September to June, with snowfalls, and dry and hot in summer. On these páramos migas de pastor — the previous day's bread crumbled, moistened and fried very slowly with garlic, oil and pork rind — were the shepherds' breakfast and are now served at festivals and communal meals.

Food and drink
Bread from the previous day chopped, moistened and fried very slowly with garlic, oil and torreznos until it comes loose. It was the breakfast of the shepherds of these moorlands at more than one thousand two hundred metres and today it is served at festivities and communal meals.
