What to see and do in Castejón

Castejón
Village
Castejón is a municipality in the district of La Alcarria Conquense, in the province of Cuenca, with 120 inhabitants (INE 2025) and a cold Mediterranean climate. Under the name Castejón de Huete or de la Alcarria it had a castle or tower, today of unknown location, which some authors identify with the one mentioned in the Cantar de Mio Cid, though others place it at Castejón de Henares (Guadalajara); the village acquired town status in 1553. It is the birthplace of the singer-songwriter José Luis Perales, one of the most popular composers in Spanish music, and preserves the parish church of Nuestra Señora de la Asunción, from the 17th century. Its traditional cuisine keeps hartatunos, a dish of white flour, boiled potatoes and chilli pepper, to which eggs and meat were added when finances allowed.

The hartatunos
Curiosity
Hartatunos are a native dish of Castejón (La Alcarria Conquense, Cuenca), today practically unknown, made with white flour, boiled potatoes and hot chilli peppers to each diner's taste. When the family's finances allowed it, it was enriched with fried eggs and products from the pig slaughter, especially liver, or with rabbit if there was game in the countryside. It was thus a recipe that adapted to whatever was available in each household, from the simplest version of flour and potato to the most complete one with egg and meat.
