The hartatunos Curiosity · Castejón, La Alcarria Conquense, Cuenca Image of Castejón, not of the place itself. Hartatunos are a native dish of Castejón (La Alcarria Conquense, Cuenca), today practically unknown, made with white flour, boiled potatoes and hot chilli peppers to each diner's taste. When the family's finances allowed it, it was enriched with fried eggs and products from the pig slaughter, especially liver, or with rabbit if there was game in the countryside. It was thus a recipe that adapted to whatever was available in each household, from the simplest version of flour and potato to the most complete one with egg and meat.
