Food and drink
Shepherds on the Navarrese slope of the Sierra de Aralar, including those from Larraun and Leitza, go up every 1 May with their flocks of latxa sheep to the highland pastures, where they make the cheese protected by the Idiazabal Denominación de Origen Protegida (Protected Designation of Origin, created in 1987), produced with raw milk in its natural version or smoked with beech, birch, or hawthorn. The designation covers the Basque Country and Navarre, with the exception of the Roncal valley.
