The Sil Canyon, carved by the río Sil near its confluence with the Miño, in the heart of the Ribeira Sacra, marks the southern boundary of the municipality of Sober and also forms a natural border between Ourense and Lugo, within an area of some six thousand hectares declared a special conservation zone. Its walls, with drops of more than five hundred metres and slopes of up to fifty degrees, originated from Quaternary tectonic processes that fractured the ground into blocks; on its sunlit slopes, terraced into steps since Roman and medieval times, grow the vineyards of the Ribeira Sacra Designation of Origin. The canyon can be toured by catamaran, and among its wildlife the genet and the wildcat stand out.

The DO, established in 1996 and registered with the European Union in 2004, extends across the provinces of Lugo and Ourense and is divided into five subzones; the vineyards of Sober, with its parishes of Doade, Amandi, Lobios and others, make up the Amandi subzone, the one most closely linked to the growing of mencía. Sober has 29 wineries registered with the regulatory council and holds the Amandi Wine Fair every year, which gives this demarcation its name.
