Cuajada de Ultzama Food and drink · Ultzama, Comarca de Pamplona, Navarra Image of Ultzama, not of the place itself. A traditional dessert of curdled sheep's milk characteristic of the valley, with a flavor of 'kizkilurrin' ('burnt stone'): a red-hot stone is placed in the kaiku, a wooden bowl with a handle, which caramelizes the lactose and gives it its distinctive flavor. Craftsmen who hand-carve the kaikus for making it still remain. The valley celebrates the Día de la Cuajada on the second Sunday of June, with tastings, dance exhibitions and open-house days in the valley's villages. segundo domingo de junio Photo: Adrar (CC BY-SA 3.0) What to see and do in Ultzama
