What to see and do in Ultzama

Ultzama
Village
A valley and municipality of 96.57 km² about 22 km north of Pamplona, with its capital in Larráinzar and fourteen concejos, among them Alcoz, Arraiz-Orquín and Lizaso. It received a charter in 1211 from King Sancho VII. The valley experienced witchcraft trials in the 16th century and guerrilla activity during the Peninsular War under Francisco Espoz y Mina.
Bosque de Orgi
Nature
A recreational oak forest of 77.7 hectares within a Special Conservation Area; the valley of Ultzama holds a total of 32 archaeological sites, including dolmens and menhirs.
Cuajada de Ultzama
Food and drink
A traditional dessert of curdled sheep's milk characteristic of the valley, with a flavor of 'kizkilurrin' ('burnt stone'): a red-hot stone is placed in the kaiku, a wooden bowl with a handle, which caramelizes the lactose and gives it its distinctive flavor. Craftsmen who hand-carve the kaikus for making it still remain. The valley celebrates the Día de la Cuajada on the second Sunday of June, with tastings, dance exhibitions and open-house days in the valley's villages.
