Girella Food and drink · el Pont de Suert, Alta Ribagorça, Lleida Girella is the only sausage that uses lamb as its base, with origins going back to the 15th century in the mountain cooking of the Pallars and the Ribagorça. In the past it was a dish reserved for great occasions, such as weddings, and in el Pont de Suert it is the signature dish of the Confraria de Sant Sebastià, the town's patron confraternity. It is made from the lamb's offal -tripe, liver and heart- stuffed and cooked, and served sliced, either grilled or stewed with potato. Since the year 2000, on the third or fourth Sunday of October, the historic centre of el Pont de Suert holds the Fira de la Girella, with a live demonstration of its preparation and free tasting for the public.
