The Truffle Fair Activity · Abejar, Pinares, Soria Image of Abejar, not of the place itself. Between February and March the village holds a fair devoted to the black truffle, a crop that has spread across the limestone soils of the Sierra de Cabrejas and has become an economic alternative for the district. The black truffle (Tuber melanosporum) lives in symbiosis with holm oaks, which cover much of the mountains of Soria; the Soria Truffle Growers' Association, with around forty members, registered the Trufa de Soria brand as a step towards a future Designation of Origin. In 2016, as part of the Soria Gastronómica International Congress of Mycology, this black truffle was twinned with the white truffle of Alba. Photo: Ecelan (CC BY-SA 3.0) What to see and do in Abejar
