The white garlic of Vallelado Food and drink · Vallelado, Tierra de Pinares, Segovia Vallelado garlic is a native variety of white garlic grown in the sandy soils of this municipality and thirty others in the provinces of Segovia and Valladolid, which together account for 70% of the garlic production of Castile and León. It stands out for the large size and uniformity of its cloves, more than double those of imported garlic and easier to peel, with a bright white flavour, crunchy, spicy and aromatic, highly valued by chefs such as Karlos Arguiñano. It is sown between October and January and harvested in July, the month in which the municipality has celebrated the Garlic Folklore Festival since 1987, also known as the Garlic Fair. After the festival, residents gather around the traditional potato calderetas. Photo: BocaDorada (CC BY-SA 2.0) What to see and do in Vallelado
