The lentil of La Armuña Food and drink · Pajares de la Laguna, La Armuña, Salamanca Image of Pajares de la Laguna, not of the place itself. Pajares de la Laguna, in the Salamancan district of La Armuña — land of the northern sub-plateau traditionally devoted to cereal farming — is home to the headquarters of the regulating council of this protected geographical indication, which brings together the district's lentil producers. It protects the lens culinaris medicus variety, light green in colour, sometimes mottled, up to nine millimetres across and with a high protein, iron and calcium content, grown across a production area of more than 70,000 hectares.
