A sausage made of rib, tail and other chopped cuts of pork, seasoned, stuffed into the caecum and smoked, traditionally boiled and served with cabbage and cachelos in the cold months. Its production is protected by the Botillo del Bierzo Protected Geographical Indication, which identifies, regulates and controls the quality of this product native to the Bierzo region, managed by a regulatory council under the Junta de Castilla y León since the year 2000.
