The cured-meat industry of Hinojosa

The dry, cold climate of the slope of the Cerro de San Vicente favours slow curing, and the town's workshops make chorizo, salchichón and cured loin with meat from the comarca. It is one of the recognised cured-meat centres of the sierra.
