Los guachinches Food and drink · Tacoronte, Tenerife - Acentejo, Santa Cruz de Tenerife Image of Tacoronte, not of the place itself. The Tacoronte-Acentejo district, the wine-growing heart of Tenerife, is the birthplace of the guachinches: establishments that emerged in the 19th century in the very homes or wine cellars of grape growers to sell off the year's surplus wine, served with simple dishes such as gofio escaldado, ropa vieja or carne fiesta. They traditionally open from October to April, coinciding with the new wine season. A popular but undocumented etymology traces the word's origin to the English "watching".
