Oil of the Sierra de Algairén

On the slopes of the sierra of Algairén a dry-farmed olive grove of the empeltre variety is maintained whose olives are milled in oil mills of the comarca. The oil, of low acidity and almond flavour, is used raw over vegetables and in the migas.
