Borage and winter vegetables of the Ebro

Borage, a white-stemmed vegetable typical of the Aragonese huerta, is grown in the vegas of the riverbank alongside cardoon and artichoke. It is boiled and served with potato, with ham or in batter, and is a fixed dish on the winter tables of the comarca.
