Lamb grilled over vine shoots

A preparation tied to the cycle of the vine: the chops and the rack are roasted over embers of vine shoots, the firewood left by the winter pruning, which burns fast and gives the meat a brief smoking. It is one of the traditional dishes of the wine-growing towns of the Campo.
