Novillas, beside the Ebro in the northwest of the province of Zaragoza, sits in the lower market-garden lands of the Huecha and the middle Ebro, historically irrigated by the Lodosa, Imperial de Aragón and Tauste canals, which sustain a centuries-old fruit-and-vegetable-growing tradition around the municipality.
