Ternasco lamb of the Aranda mountains

The scrubland and the high pastures of the south of the Moncayo maintain sheep flocks whose meat is covered by the Protected Geographical Indication Ternasco de Aragón. It is prepared roasted in a wood-fired oven and as chops over vine-shoot embers.
