Black truffle (Tuber melanosporum) that has made Sarrión a world benchmark for this prized fungus: the municipality has, according to experts, some of the best growing conditions in Europe, and its market is one of those that set the product's price at European level, able to rival French truffles in quality, which until recently were considered the best in the world. Since 2001 Sarrión has hosted the FITRUF fair in early December, aimed at professionals in the sector, with cookery courses, truffle cuisine competitions and truffle hunting with dogs. The boom in harvesting has increased the municipality's population so far this century.
