Festival of a Androlla Activity · Viana do Bolo, Viana, Ourense Image of Viana do Bolo, not of the place itself. A gastronomic contest held on Fat Sunday dedicated to the androlla, a sausage of minced, seasoned pork rib smoked in the traditional way; in February 2026 it held its fifty-fourth edition. The androlla is made with pork rib, paprika, salt and garlic, stuffed into the widest section of the large intestine, and sometimes also includes pieces of rind; it is eaten mostly boiled, accompanied by cachelos and vegetables or by a cocido, though it can also be roasted in the oven or grilled. It is a typical dish of south-eastern Ourense, Lugo and El Bierzo, and besides in Viana do Bolo it has its own festival in the town of Navia de Suarna, in Lugo province. The name comes from the French andouille, already documented in the Middle Ages. Photo: Estevoaei (CC BY-SA 4.0) What to see and do in Viana do Bolo
