Cea bread Curiosity · San Cristovo de Cea, Carballiño, Ourense Bread made in bakeries of San Cristovo de Cea covered by the Indicación Xeográfica Protexida (Protected Geographical Indication), recognised in 2004 and registered in 2005, which in 2020 certified a production of more than 423,000 kilos across fifteen ovens. It is made with local wheat flour, water, salt and sourdough: manual kneading of at least one hour, resting, division into pieces of 1.5 or 0.75 kilos and slow baking for at least two hours in a wood-fired oven, with a prior transverse cut that produces its characteristic single greña split. It has a thick, crunchy crust, ranging in colour from golden to dark brown, and a spongy, dense crumb with an intense wheat flavour that stays soft for several days. Since 1991 the Fiesta de Exaltación del Pan de Cea has been held every first Sunday of July at the Campo da Saleta. Photo: Dario Alvarez (CC BY 2.0) What to see and do in San Cristovo de Cea
