Gachamiga and mountain gazpachos

The cooking of Bicorp preserves two shepherds' dishes: gachamiga, a paste of flour, water, oil and garlic worked in the pan until it comes away, and gazpachos, a meat stew served on unleavened flatbread. They are still prepared at meals in the countryside.
