The clay pot of Manises Food and drink · Manises, L'Horta Sud, Valencia Image of Manises, not of the place itself. The potteries of Manises have for centuries supplied glazed clay pots to Valencian kitchens. This type of clay vessel, round, low and wide, was already used in Greco-Roman times and is documented in the Catalan-speaking lands from the 14th century, with examples dated to 1348 in Morvedre and 1389 in Barcelona. In them are cooked arròs al forn and all i pebre, because clay, a poor conductor of heat, spreads the heat slowly and more evenly than metal, and allows rice dishes to be finished inside the oven; it also keeps dishes hot longer once on the table, though it cannot be used on induction hobs.
