El Fondó de les Neus
Village
El Fondó de les Neus, officially El Fondó de les Neus/Hondón de las Nieves, is a municipality of the Vinalopó Mitjà comarca, in the province of Alicante, with 2,738 inhabitants, set in a small valley protected by the Sierras of Crevillente and Algayat, amid pines, almond trees, olive trees and vineyards. It was settled mainly by colonists who arrived from Monòver between the early 18th century and 1830, and it fell under the jurisdiction of Aspe until 1839, when it was constituted as a municipality together with neighbouring Hondón de los Frailes, from which it separated definitively in 1926. Its parish church of Nuestra Señora de las Nieves, in Baroque style, was built in 1746 on the site of the old ermita of San Pedro. In the Rollo cave, an Upper Palaeolithic site has been documented.
Mountain range of Crevillente y Algayat (vertiente de Hondón de las Nieves)
Nature
Valley protected by the Sierra de Crevillente and Algayat ranges, home to pines, almond trees, olive trees and vineyards, in the municipal area of Hondón de las Nieves. The Sierra de Crevillente, made of limestone materials of Jurassic, Cretaceous and Miocene age, reaches its highest point at La Vella, at 836 meters, followed by peaks such as El Picacho or San Cayetano, San Yuri, el Puntal de Matamoros and El Campanar. Tree cover is scarce, with pines on the northern slope and an abundance of esparto grass, while carob and almond trees are grown in the lower areas. On its slopes there survive remains of human occupation from the Upper Paleolithic and a 13th-century Andalusi qanat, visible in the Els Pontets aqueduct.

Settlers from Monòver and the separation from Aspe
Historical milestone
The present population is descended above all from colonists who came from Monòver between the beginning of the eighteenth century and the 1830s. The settlement depended on the jurisdiction of Aspe until 1839, when it was constituted as a municipality together with neighbouring Hondón de los Frailes.
Gazpachos and gachamiga of the farmhouses
Food and drink
Two country dishes coexist on the table: the game gazpachos served over pieces of unleavened flatbread and the gachamiga of flour, oil and garlic made in the pan. They are accompanied by rabbit and snails and were the work-gang food in the farmhouses.
