The first written mention dates from 1741, in letters of a local noble family that cite seven turrón-makers in the town. It has held Protected Geographical Indication status since 2002, regulated by the Generalitat, and is registered in the EU register. Its paste has a golden-brown colour, fragile and crunchy, with a minimum almond or hazelnut content of between 46% and 60% depending on whether it is of extra or supreme category; to make it, the nuts are toasted and peeled and cooked with honey, sugars and egg white before being mixed together.
