Fredolics Mushroom Soup Curiosity · Granollers, Vallès Oriental, Barcelona Image of Granollers, not of the place itself. The fredolic (Tricholoma terreum) is an edible mushroom with white flesh that grows in pine woods and appears in clusters with the first frosts, hence its popular name; its season thus extends picking well into winter. It has a cap that is often irregular, with a prominent centre and a dry, velvety greyish cuticle, and a thin, cylindrical, fibrous stem that breaks easily. It is traditionally used in stews and soups, such as the fredolic soup of the Vallès Oriental. It should not be confused with Tricholoma pardinum, which is toxic, more robust and has a scaly cap, and is found in beech and fir woods at higher altitude.
