Oropesa-style eggs

Fried eggs on a base of chorizo mixture crumbled and sautéed in its own fat, a slaughter-time dish that makes use of the seasoned meat before it is stuffed into casings. It is eaten from the pan and with bread, and is habitual at winter meals.
