Sweet Onion of Fuentes de Ebro Curiosity · Fuentes de Ebro, Comarca Central, Zaragoza Image of Fuentes de Ebro, not of the place itself. The Fuentes de Ebro Onion has held a Protected Designation of Origin since 2010 and is grown, processed and packaged in six municipalities of the area, including Fuentes de Ebro, in the province of Zaragoza. It is a sweet variety, straw-white on the outside with white inner layers, with a tender, crunchy and very juicy texture due to its high water content. It is characterized by its mild pungency and its low level of pyruvic acid, far lower than that of storage onions, which makes it mild and easy to digest. It is especially prized in salads and for caramelizing without the need for added sugar, making it one of the favourite vegetables of chefs and children alike.
