Ternasco lamb of the Ansó sheep breed Food and drink · Ansó, La Jacetania, Huesca Image of Ansó, not of the place itself. The ansotana is a native Aragonese sheep breed, found mainly in the province of Huesca, in the valleys of Hecho and Ansó, from which it takes its name; the Catálogo Oficial de Razas de Ganado de España lists it among the breeds at risk of extinction. It belongs to the entrefino stock of the Pyrenees and has traditionally been closely linked to the rasa aragonesa sheep; it is a very hardy animal with a semi-closed fleece, in which both sexes can grow horns, though these are more common in males. It is raised mainly for meat, and the ansotana is one of the breeds covered by the protected geographical indication Ternasco de Aragón, which requires lambs under ninety days old raised on their mother's milk and carcasses of between eight and thirteen kilos.
